If it’s not obvious by now, I love food. Especially if it comes in the form of chocolate, particularly Chocolate with peanut butter. Yes please! Chocolate, Peanut Butter and Protein all together? Without further ado, here’s a quick Protein Brownie recipe that will knock your socks off! 1 scoop of whey protein (I used Optimum Nutrition Double Chocolate, Sophia used Rocky Road)* 1/4c of Coconut Milk or Low Fat Milk (1-2%) 1 Tsp All Purpose Flour 1/2 Tsp Baking Powder 1/2 Tsp Baking Soda 1 Tsp Baker’s Coco 1 pinch of salt (that’s approximately a 1/16th of a Tsp if you’d like an actual measurement) 1 Splenda or Stevia Packet (optional) 1 Tb Peanut or other Nut Butter (optional) Sift all the dry ingredients together Blend with the milk and mix thoroughly Drop your PB right in without mixing Microwave in a tall* glass or ceramic bowl for 40-60 seconds *I’ve recently learned that both the brand and flavor of protein may impact the outcome (I tried other flavors of the same brand, some came out great others came out wretched) so if you’re using a different brand it might not come out as intended. Steer clear of Casein Protein for cooking, it’s just… terrible. *Tall glass or bowl to avoid spillover, it will rise! *Cook time varies based on microwave and cooking receptacle for example, when cooking this in plastic Tupperware, it could take up to 90 seconds As an added bonus, you can use the same exact batter to make yummy Chocolate Protein Pancakes (the same way you’d cook normal pancakes) just slap the PB in between them instead of in the batter.
